The Rancho Bravo / Pinky’s Kitchen food court is now shy one vendor: Pinky’s has closed up shop.
It’s tough to say exactly what happened, as both Freddy Rivas, who owns Rancho Bravo and was a partner in Pinky’s until earlier this year, and Khoa, the new owner of Pinky’s are somewhat mum. It’s possible legal wrangling may follow.
From what I understand, Khoa bought out both Freddy and the original co-owner of Pinky’s in March. Pinky’s may have been undergoing some financial problems (perhaps unpaid taxes) at the time. Business was doing well under the new management, according to Khoa, but then something between Freddy and Khoa (or between Rancho Bravo and Pinky’s) went south, and Rancho Bravo rescinded Pinky’s permission to operate on the premises. Freddy says he is looking for a new restaurant to take Pinky’s place, and would like it to be a BBQ spot if he can find one.
Khoa plans to re-open Pinky’s in Spring of 2016 in a brick-and-mortar location yet to be determined. As he notes, it’s hard to find a spot that can accommodate a smoker, so if you have a suggestion, contact them through their web site. (Likweise, if you’re interested in buying a used food truck, same same.)

How about over my Uptown Espresso?
I want to love Pinky’s. The food us usually great. The pickled purple cabbage was my favorite. It was much better when in was across the street for some reason. After it moved back to where it is now, which I like, it seemed like the quality of the food diminished a little, but not enough to stop me from eating there. The staff, who changed often, made mistakes on orders, especially larger orders, but not enough to keep me from going there. The staff also became somewhat indifferent and uncaring, but again, not enough to keep me from going there. What made me stop going there is that the staff would step out back to smoke, and when they came back, would not wash their hands before handling the food. Kind of grossed me out. I would LOVE to see a new BBQ place in Wallingford.
Well what about the meat place which closed by the Post Office?
