Ambling home down 45th St last night, we noticed some work going on in the old Lotus Thai at the corner of Meridian, which closed back in January. Turns out the man screwing in light bulbs at 10 o’clock at night was Apple, part of the husband and wife team that bought the business when the owners of Lotus Thai retired.
Apple arrived in the US from Thailand on September 9, 2001 (yep, that September) and his wife Lucky arrived shortly after. Apple is a graduate of the culinary arts program at South Seattle Community College and Lucky has a degree in hospitality management from Highline Community College (as well as study and work back in Thailand).
Their grand opening is tomorrow (Saturday, Feb 9th) at noon, so stop in and welcome them. If you miss opening day, have no fear, they’ll be open seven days a week (M-F 11 am – 9:30 pm, weekends 12 – 9:30 pm).
Lucky told us that she was a writer herself before she came to the US, so we asked her if she could say a few words to Wallingford to mark her opening. Here’s what she has to say to you:

Dear our neighbors,
On behalf of Silver Tray, I would like to thank you very much for warm welcoming, our grand opening was great!
We are right at the corner of 45th and Meridian and waiting to serve you a delicious of Thai food with great service, dining, to go pick up, and delivery.
